For our latest Exceptional Cask release, we’ve selected a Double Cask Rye — the oldest ever bottled at Hillrock. This one hails from our 2015 Pooles Hill harvest, aged about nine and a half years in our rickhouse. The interplay of layers resulting from the long multi-barrel aging process have yielded a pleasant, viscous spirit, with sweet oak notes that linger on the tongue. On the nose, rich toffee, caramel, and dark fruits like plums and cherries mingle with vanilla crème, bruleed citrus, and quintessential rye spice. On the palate, a syrup-like texture gives way to baking spices, dark caramel pastry, and sweet oak. Notes of candied citrus round out a long, smooth finish, showcasing exceptional balance and depth.
